Ingredients

Serves 3 servings
  1. 5 1/3 ozthinly sliced pork (about 150g)
  2. 1/2onion
  3. 3 packsudon noodles
  4. For the broth:
  5. 4 1/4 cupswater (1000ml)
  6. 4 tablespoonsconcentrated noodle soup base (mentsuyu)
  7. 1/2 boxJapanese curry roux (for 8 servings per box)
  8. Potato starch mixed with water, as needed (for thickening)
  9. as neededChopped green onions,

Steps

  1. 1

    Cook the udon noodles according to the package instructions. Drain and place them in serving bowls. Slice the onion into wedges.

  2. 2

    In a pot, combine the water and noodle soup base. Bring to a boil, then add the onion and pork. Simmer, skimming off any foam.

  3. 3

    Once the onion is tender, add the curry roux and stir until dissolved. Simmer over low heat, stirring occasionally.

    After simmering for a while, thicken the broth with the potato starch mixture. Pour the curry broth over the udon noodles. Top with chopped green onions.
