Ingredients

  • 2 cupscoarse semolina (about 320 grams)
  • 1/4 cupmelted clarified butter or ghee (about 60 grams)
  • 1/2 cupsimple syrup (about 120 ml)
  • 1/4 cupsugar (about 50 grams)
  • 2ground mastic pieces
  • Pinchsalt
  • 1 teaspoonbaking powder
  • 1 tablespoonpowdered milk
  • 1/2 cupboiling hot water (about 120 ml)
  • 2 tablespoonsorange blossom water (about 30 ml)
  • Assorted nuts for garnish
  • 1 1/2 cupssimple syrup for soaking (about 360 ml)

Steps

    Mix all the ingredients together and let the mixture rest for 2 hours.

  2. 2

    Grease a baking pan with tahini, spread the harissa mixture evenly, and decorate with nuts. I used sliced almonds for garnish.

  3. 3

    Bake in a preheated oven until the bottom is golden brown.

  4. 4

    Broil the top until golden, then remove from the oven and pour cold simple syrup over the hot harissa.
