  1. Any amount of curry bread dough, prepared through the second rise
  2. Salad oil, enough to fill your skillet just under halfway
  3. 1deep skillet
  4. 1pair of tongs or long cooking chopsticks

    The ideal oil temperature is about 320–340°F (160–170°C). Since high heat can make the oil too hot quickly, preheat the oil over medium-low heat. Using a thermometer is recommended.

    Keep the oil at 320–340°F (160–170°C) by maintaining medium-low heat.

    Gently slide the curry bread into the oil along the side of the skillet. At first, you’ll see lots of small bubbles around the dough.

    Fry no more than 3 pieces at a time. If it’s your first time, start with just 2.

    Flip the bread once right after adding it to the oil.

    After flipping, the top will puff up quickly—don’t touch it at this point.

    When the side in the oil starts to turn slightly golden, flip the bread again.

    Tip: If the top puffs up but flattens right after flipping, hold it gently in place with tongs for a moment until it stays puffed.

    Repeat flipping 2–3 more times as the side in the oil becomes a deeper golden brown than the top. The bread will gradually turn a beautiful golden color.

    As the dough cooks through, you’ll notice fewer bubbles forming.

    When there are almost no bubbles left, the bread is done. This takes about 6 minutes from when you add it to the oil.

    Drain the bread well and transfer to a rack or tray.

    Before frying the next batch, always remove any leftover breadcrumbs from the bottom of the skillet to prevent dark specks from sticking to the next pieces.

    Note: The oil temperature will keep rising as it stays on the heat. If it gets too hot, turn off the heat for a while, then turn it back on when needed.
