Poke the skin side of the chicken thighs all over with a fork to help the flavors soak in.

Season the chicken with salt and pepper. Place the chicken skin-side down in a cold skillet (no oil needed) and cook over medium heat.

As the fat renders out, use a paper towel to blot and remove the excess fat from the pan.

Once the skin is golden and crispy, flip the chicken over. Cover with a lid and cook on low heat for about 5 minutes, until cooked through.

When the chicken is fully cooked (the juices run clear when pierced), add all the sauce ingredients (soy sauce, sake, mirin, sugar) to the pan.

Swirl the pan to coat the chicken evenly and simmer until the sauce thickens and glazes the chicken.

Slice the chicken into bite-sized pieces and serve on a plate with lettuce and cherry tomatoes.
