Thinly slice the onion crosswise.

Cut the carrot into thin half-moon slices. Cut the bell pepper in half lengthwise, then slice thinly crosswise. Cut the eggplant in half lengthwise, then slice thinly on a diagonal.

Slice the sausages thinly on a diagonal.

Heat the olive oil in a skillet. Add the sausages and stir-fry over medium-high heat.

When the sausages become fragrant, add the onion and stir-fry for 1–2 minutes. Add the carrot, bell pepper, and eggplant, and stir-fry until all the vegetables are tender.

Add the udon noodles and gently separate them. Pour in the milk and sprinkle with chicken bouillon powder. Cover and cook over low heat for about 3 minutes.

Taste and season with salt and pepper as desired. Add the cheese, stir briefly, then turn off the heat.
