Ingredients

4 servings
  1. 4boneless, skinless chicken breasts, 4 oz each
  2. 1/2 tspsalt
  3. 1/4 tspblack pepper
  4. Sauce:
  5. 4 tspolive oil, divided
  6. 1large shallot, minced
  7. 2-1/2 cfresh blueberries
  8. 1chipotle pepper in adobo sauce (from a can), diced
  9. 2 Tfresh lime juice
  10. 1 Tbrown sugar
  11. 1 Tfresh mint, minced
  12. 1 tspfresh lime zest

Steps

  1. 1

    In small pan, heat 2 tsp of oil. Add shallots and cook until tender. Add blueberries, chipotle, juice and sugar. Bring to boil then reduce heat, cover and simmer for 10 min.

  2. 2

    In large skillet, heat 2 tsp olive oil. Sprinkle both sides of chicken breasts with salt and pepper. Add chicken to skillet and sear both sides until cooked through.

  3. 3

    Remove sauce from heat, add mint and zest. Serve with chicken.
