Marugame Seimen-Style Bukkake Udon! Beef Torotama Udon

A copycat recipe for Marugame’s hot & cold bukkake udon. If you mix the egg with the beef, it tastes just like sukiyaki! Perfect for lunch. If you skip the meat, it becomes torotama udon.

I saw a commercial this morning and created this recipe in my head, then cooked it for real and it turned out delicious. I went to the Marugame in the nearby Aeon mall to taste the original and made a few tweaks. The recreation is very accurate, so I’m sharing it here. It’s been a while since my last copycat recipe series.

It’s been a while since my last copycat recipe series.

First, make the easy bukkake udon sauce by mixing the ingredients together. Store-bought sauce is fine too. See ID:20385483 for details.

For the soft-boiled egg topping, use the method described in ID:18806656, as it’s different from a regular soft-boiled egg.

Mix the ingredients marked with ○ (mirin, soy sauce, sugar) in a bowl. Marinate the beef in this mixture for about 30 minutes. For a more authentic taste, use 2 tsp sugar; the standard is 0.

You can serve this dish hot or cold. For the cold version, after boiling the noodles, rinse and rub them well under cold running water.

Heat a frying pan over high heat. If you have beef fat, use it; if not, use lard or oil. Sauté the beef with the marinade quickly until just cooked through.

Drain the noodles well and place them in a bowl. Pour the sauce over the noodles, then top with grated yam, soft-boiled egg, beef (with sauce), and chopped green onions. Enjoy!

For the hot version, microwave the sauce to warm it. You can use freshly boiled noodles or rinse and chill them as for the cold version. If you skip the meat, it becomes regular torotama udon.
