Purple Coleslaw with Red Cabbage and Red Onion

Why not try adding this coleslaw to your dish? The vibrant colors of purple vegetables, green herbs, and orange carrots make this coleslaw a beautiful addition.
The origin of this recipe: Purple is such a beautiful color, isn't it? Although it might not always be the star (or so I think), it's stunning. I've decided to shine the spotlight on red cabbage.

Steps
- 1
Thinly slice the cabbage, red cabbage, and carrot. *Using a slicer for the carrot is convenient.
- 2
Slice the red onion as thinly as possible, perpendicular to the fibers. *Do not soak in water.
- 3
Place the ingredients from steps 1 and 2 in a bowl, sprinkle with salt, and mix quickly. Let sit for 10-15 minutes, then gently squeeze out excess moisture. *Be careful not to squeeze too much.
- 4
Mix in the rice vinegar, honey, and white pepper, then add the torn dill. Chill in the refrigerator before serving.
- 5
If desired, add a little extra virgin olive oil before serving for extra flavor.
- 6
Mixing in a little mayonnaise (not listed in ingredients) before serving gives a slightly pink and creamy taste.
