Ingredients

  • 4zucchini
  • 4tomatoes
  • 2lemons
  • Panko breadcrumbs
  • 1 lbCod filets
  • 2 clovesgarlic
  • Parsley
  • Salt
  • Pepper
  • Dill

Steps

  1. 1

    Preheat oven 425

  2. 2

    Quarter vegetables and 1 lemon, arrange on baking sheet.

  3. 3

    Sprinkle with olive oil, minced garlic, salt & pepper. Toss.

  4. 4

    Lay Cod filets on top of veg.

  5. 5

    Zest lemon. Mix with panko, dill, salt and pepper. Spoon mixture on top of fish.

  6. 6

    Bake for 10-15 minutes
