The listed vegetables are just examples—use whatever you have at home!

Prepare the vegetables. Tear the lettuce into bite-sized pieces. Thinly slice the core. Cut the cucumber into thin strips. Slice the onion thinly. Cut the tomatoes into eighths.

Briefly soak the cut vegetables in ice water, then drain well. I use a salad spinner to remove excess water.

Combine the ingredients marked with * (cooking sake, ponzu, water) in a pot and bring to a boil. Add about 3 slices of pork at a time; once they turn white, remove them. Be careful not to overcook.

Place the cooked pork in a colander to cool.

Use 3 tablespoons of the leftover cooking broth as the base for the dressing. Place it in a container and add the sesame oil, green onion, and ginger. Add chili bean paste or mustard if you like it spicy.

Arrange the vegetables nicely on a plate, top with the cooked pork, and drizzle with the dressing from step 5.

If the dressing tastes too light, add more broth or extra ponzu to taste.
