Easy Shanghai-Style Yakisoba (Stir-Fried Noodles)

This authentic Shanghai-style yakisoba is simple, made with pork and leafy greens, and seasoned with sweet Chinese soy sauce. You can easily make it with whatever you have in your fridge!
Recipe background: I first tried Shanghai yakisoba at a Chinese restaurant in Singapore and loved it. That version included shrimp, so I added it here. Since Chinese soy sauce can be hard to find, I use a mix of oyster sauce, soy sauce, and sugar as a substitute.

Ingredients

Serves 3 servings
  • 3servings yakisoba noodles (thick noodles if available)
  • About 3.5 oz (100 g) pork
  • About 3.5 oz (100 g) peeled shrimp
  • 1 bag(about 3.5–4 oz/100–120 g) leafy greens such as baby bok choy, chives, or spinach
  • 1/2onion
  • 1 tablespoonor more toasted sesame oil
  • (For marinating pork)
  • 1little grated garlic
  • 1little grated ginger
  • 1 pinchsalt and black pepper
  • 1 teaspoonsake (or dry sherry)
  • 1/2 teaspooncornstarch
  • (Sauce mixture)
  • 2–3 tablespoons oyster sauce
  • 1 tablespoonsoy sauce
  • 1 teaspoonsugar
  • 1/2 teaspoonchicken bouillon powder

Steps

    Place the pork and marinade ingredients in a plastic bag and mix well. Cut the leafy greens into 2-inch pieces. Mix the sauce ingredients together. Microwave the noodles for 1 minute.

    Heat sesame oil in a wok over high heat. Stir-fry the pork quickly, then add the leafy greens and stir-fry. Add the shrimp and cook until done, then season with a little salt and pepper.

    Add the noodles and stir-fry until slightly crispy. Pour the sauce mixture around the edge of the wok and toss everything together. Finish with a drop of sesame oil for aroma.
