Ingredients

  1. For the Lemon Cake
  2. 2 1/2 cupscake flour
  3. 1 1/4 teaspoonbaking powder
  4. 3/4 teaspoonbaking soda
  5. 1/2 teaspoonsalt
  6. 3/4 cupsgranulated sugar, divided use
  7. 10 tablespoonsunsalted butter, melted
  8. 1 cupbutter,ilk, at room temperature
  9. 3 tablespoonsvegtable oil
  10. 1 tablespooneach fresh lemon juice and lemon zest
  11. 1 1/2 teaspoonsvanilla extract
  12. 6large egg yolks, at room temperature
  13. 3large egg whites, at room temperature
  14. For Lemon Cream Filling and Frosting
  15. 8 ouncescream cheese, at room temoerature
  16. 1/2 cupsalted butter, at room temperature
  17. 2 tablespoonsv fresh lemon juice
  18. 2 teaspoonsfresh Lenin zest
  19. 2teapoon vanilla extract
  20. 1 1/2 cupheavy whipping cream
  21. 3 cupsconfectioner's sugar
  22. For Garnish
  23. as neededsprinkles and fresh blueberries

Steps

    Make the lemon Cake

    Preheat the oven to 350. Spray 3 - 8- inch cake pans with bakers spray

    In a bowl whisk together the flour, baking 6, baking soda, salt and 1/2 cup of the sugar

    In another bowl combine the butter, buttermilk, lemon juice and zest, vanilla and egg yolks, whisk to blend

    In a third bowl beat egg whites until they form firm peaks, adding the last 1/4 cup sugar slowly

    Gradually beat the buttermilk mixture into the flour nixture

    Gently fold the egg whites in until uniform in color

    Divide evenly in prepated pans and place on a cookie sheet, bake about 18 to 20 minutes untik a toothpick comes put just clean. Cool 1p minutes then remove from pans and cool completely before frosting

    Make Lemon Cream Froapsting

    Beat cream cheese, butter, vanilla, lemon juice an zest and confectioner's sugar until blendec

    Beat cream to firm peaks and fold into cream cheese mixture

    Fill and frost cake

    Place one layer bottom up on serving playe

    Add some frosting

    Place second layer, bottom up

    Frost

    Place third layer

    Frost entire cske

    Garnish with sprinkles and fresh blueberries. Refigerate at least 2 hours for easy slicing

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
