Cooking Instructions
- 1
Cut the sweet potato into 3/4-inch cubes and rinse in water to remove bitterness. Don't soak too long or it will lose sweetness. Just rinse 2-3 times quickly.
- 2
Cut the chicken into 1-1 1/4 inch pieces, place in a plastic bag, add sake (not listed in ingredients), massage, and let sit for a bit.
- 3
Place the sweet potato in a microwave-safe dish and microwave for about 3 minutes. Mix the ☆ ingredients together.
- 4
Heat oil in a frying pan and cook the sweet potato until golden brown, then set aside on a plate. Avoid moving them too much to prevent crumbling.
- 5
Add cornstarch (not listed in ingredients) to the chicken bag, and let it sit without moving until browned. Once both sides are browned, cover and steam-cook.
- 6
Once the chicken is cooked, return the sweet potato to the pan, add the ☆ mixture, and stir-fry together. Move the pan to coat everything. Using chopsticks may cause the sweet potato to crumble.
- 7
Simmer until the sauce reduces to about 1/3, then serve on a plate and enjoy!

Juicy chicken with a sweet and savory sauce that goes perfectly with rice—this is a delicious Japanese main dish you can make easily in one skillet.Recipe background:I used to have trouble getting the chicken skin crispy or the teriyaki sauce would turn out too heavy. By slowly cooking the chicken skin-side down over medium heat and thoroughly blotting away the rendered fat, the flavor improved a lot. Simmering the sauce until it thickens (without burning) helps it coat the chicken beautifully. *モモのごはん*Translated from Cookpad Japan
