I created this after making another recipe with Ajipon. I thought it would be delicious to use Ajipon for cold udon, so I topped it with my favorites: grated daikon and pork belly.

Cooking Instructions

Mix the sauce ingredients (marked with ☆) together and chill in the refrigerator.

Cut the pork into bite-sized pieces and cook in boiling water until the color changes.

While the pork is still hot, pour white dashi broth over it.

Bring eggs to room temperature, then boil in boiling water for 6 minutes. After 6 minutes, transfer to ice water.

Cook the frozen udon noodles according to the package instructions, then cool in ice water and drain well.

To serve, layer the udon, sauce, grated daikon, soft-boiled egg, pork belly, and green onion in that order.
