Prepare all ingredients. Squeeze excess juice from the kimchi and finely chop it.

Add salt to the ground pork and mix until sticky. Add the sugar and cooking rice wine, then mix well. Gradually add water in two parts, mixing as you go until the meat absorbs the liquid.

Mix the chopped kimchi into the pork mixture from step 2. Cover and refrigerate for 30 minutes.

Place a spoonful of the filling from step 3 onto each dumpling wrapper.

Fold the wrapper in half and pinch the edges tightly, then gently stretch the ends to form a potsticker shape.

Heat a pan with a little oil. Place the potstickers from step 5 in the pan and cover with a lid.

Pan-fry over medium heat for about 3 minutes, then pour in the flour water and cover again.

When the flour water forms a crispy skirt at the bottom, continue to cook covered for about 3 more minutes.

Serve with your favorite dipping sauce for delicious Korean kimchi pork potstickers.
