Biscuits Made with Soda

Last week, I impulsively bought 20 kilograms of flour online, so I've been trying hard to use it up. I saw an Australian recipe using lemon soda to make biscuits, which seemed interesting. Curious, I decided to try using Taiwanese soda to make a dessert. I experimented with Sprite, and... I actually succeeded!!

Tips

*In this recipe, 1 cup = 200ml

*Since my oven is quite old and not very precise, I also tried using an air fryer at 320°F (160°C) for 10 minutes, and it worked.

  • 3 cupsall-purpose flour
  • 3 teaspoonsaluminum-free baking powder
  • 1 teaspoonsalt
  • 1 cupheavy cream
  • 1 cupSprite (lemon soda)
  • All-purpose flour (for dusting)

    Mix the all-purpose flour, aluminum-free baking powder, and salt together.

    Pour in the heavy cream.

    Add the Sprite (lemon soda).

    Knead into a dough that doesn't stick to your hands (you can add some flour to achieve this; I added about 1/3 cup for dusting), then roll it out into a thick sheet.

    Use a cutter to press out shapes. I didn't have a baking cutter, so I used a small fruit and vegetable cutter to make bite-sized biscuits.

    Place them on a baking sheet. You can brush the tops with heavy cream for color.

    Bake in the oven at 392°F (200°C) for about 15 minutes. The mini biscuits can be served with jam and butter. Delicious!
