Prepare your choice of ingredients for tempura.

In a bowl, add the mayonnaise, vinegar, and sake. Stir to dissolve the mayonnaise. (1 tablespoon of mayonnaise is about the size of one egg yolk.)

Add the water, ice cubes, flour, and potato starch. Mix roughly with chopsticks about 5 times—do not overmix. Leave some lumps of flour in the batter.

Coat your chosen ingredients in the batter and fry. As you dip the ingredients, the flour will mix in a bit more.

Once golden and crispy, drain the tempura on paper towels. (I usually shallow-fry mine.)
