Easy Crispy Tempura Batter

Even after some time, this tempura stays crispy! By adding just a few seasonings to the batter, you can make delicious, crunchy tempura.

Recipe background:
I know that fried foods taste best when made right before eating, but since my youngest child is small, I can only fry during nap time. After trying different methods, I found a way to keep the tempura crispy even after some time has passed.

Ingredients

Serves about 2 servings
  1. 1 tablespoonmayonnaise (about 15 grams)
  2. 1 teaspoonvinegar (about 5 grams)
  3. 1 teaspoonsake (about 5 grams)
  4. 2-3ice cubes
  5. Water plus ice to make 65 grams (about 1/4 cup)
  6. 1/3 cupall-purpose flour (about 40 grams)
  7. 1 tablespoonpotato starch (about 10 grams)
  8. As needed, your choice of ingredients for tempura

Steps

    Prepare your choice of ingredients for tempura.

    In a bowl, add the mayonnaise, vinegar, and sake. Stir to dissolve the mayonnaise. (1 tablespoon of mayonnaise is about the size of one egg yolk.)

    Add the water, ice cubes, flour, and potato starch. Mix roughly with chopsticks about 5 times—do not overmix. Leave some lumps of flour in the batter.

    Coat your chosen ingredients in the batter and fry. As you dip the ingredients, the flour will mix in a bit more.

    Once golden and crispy, drain the tempura on paper towels. (I usually shallow-fry mine.)
