[Marugame Seimen] Copycat Kake Udon Recipe

Soak about 4 inches (10 cm) of kombu in 2 cups (500 ml) of water for about 10 minutes, until the kombu softens.

Place the kombu and soaking water in a pot. Heat over medium to low heat, making sure not to let it boil. When small bubbles start to form, remove the kombu.

Turn off the heat, add 1 packet of dashi, and let it steep for about 5 minutes without boiling.

Remove the dashi packet. Bring the broth to a gentle boil over medium-high heat and skim off any foam (you can skip this step if you prefer).

Add 3 to 4 tablespoons of white dashi (adjust to taste).

Taste the broth and add a pinch of salt if needed.

Microwave the frozen udon noodles to thaw, then add them to the broth.

Serve the udon in bowls and top with your favorite garnishes.

If using dried wakame, rehydrate it separately before adding as a topping. Adding it directly to the broth can make the seaweed flavor too strong.

I only had pre-sliced aburaage, so I seasoned it and used it as a topping.
