Cut the chicken into bite-sized pieces. Season with salt and pepper, then coat with potato starch.

Remove the stems from the shishito peppers and grill or sauté them.

Beat the eggs with sugar and scramble them well. (Sugar amount not included in main list)

Cook the chicken on both sides. Cover with a lid and cook through.

Add sake, mirin, soy sauce, and sugar to the pan and cook until the chicken is glazed.
