Ingredients

Serves 2 servings
  1. 2 piecestonkatsu (Japanese pork cutlet)
  2. 1/2onion
  3. 2/3 cupdashi broth (about 150 ml) (water + 1 teaspoon dashi granules)
  4. 2 tablespoonssoy sauce
  5. 1 tablespoonsugar
  6. 3-4eggs

Cooking Instructions

    Add the dashi broth, soy sauce, sugar, and thinly sliced onion to a skillet. Bring to a simmer over medium heat.

    When the edges of the onion turn translucent, add the sliced tonkatsu.

    Tip for soft eggs: Don’t overmix the beaten eggs! It’s fine if the whites and yolks are barely combined.

    Once the tonkatsu is heated through, pour the beaten eggs evenly over the top. Reduce to low heat, cover, and cook for 20–30 seconds until just set. Done!
