Steps

Wrap the tofu in paper towels and microwave at 600W for about 3 minutes to drain excess water. Let it cool.

Cut the tofu in half. Make a slit in the center of each piece and insert a folded slice of cheese. Sprinkle with salt and pepper.

Coat the tofu pieces evenly with flour.

Dip them in the beaten egg.

Coat generously with panko breadcrumbs.

Pour olive oil into a skillet to a depth of about 1/8 inch (3mm) and heat. Add the breaded tofu and cook over medium heat for about 3 minutes.

Flip and cook the other side until both sides are golden brown. Serve with tomato ketchup drizzled on top.
