Homemade ramen broth—turned out delicious! I made this as a soup base for gluten-free ramen. Background: Because of a wheat allergy, I needed gluten-free ramen. I used gluten-free noodles. Combining chicken stock and Japanese-style dashi made it really tasty!

Homemade ramen broth—turned out delicious! I made this as a soup base for gluten-free ramen. Background: Because of a wheat allergy, I needed gluten-free ramen. I used gluten-free noodles. Combining chicken stock and Japanese-style dashi made it really tasty!

Bring the water to a boil and add the green onion. Stir in the seasonings. Simmer briefly, then add the bean sprouts. Finish with a drizzle of sesame oil.

Cook the rice noodles until al dente, then rinse with cold water. Drain well, place in bowls, and microwave at 600W for 1 minute 30 seconds.

Pour the soup over the noodles and enjoy!
