Homemade ramen broth—turned out delicious! I made this as a soup base for gluten-free ramen. Background: Because of a wheat allergy, I needed gluten-free ramen. I used gluten-free noodles. Combining chicken stock and Japanese-style dashi made it really tasty!

Ingredients

Serves 2 servings
  1. 2 1/2 cupswater (600 ml)
  2. 4 teaspoonsno-additive chicken bouillon powder
  3. 1/2 teaspoonJapanese dashi powder
  4. 4 teaspoonsgluten-free soy sauce
  5. 1 tablespoonsake (Japanese rice wine)
  6. 1/3 teaspoonsugar
  7. 1 pinchsalt
  8. 1drizzle of sesame oil
  9. White pepper, to taste
  10. 1/3 stalkgreen onion
  11. 1/2 bagbean sprouts
  12. as neededLeftover stir-fried vegetables,
  13. 2 packsgluten-free ramen noodles

Steps

  1. 1

    Bring the water to a boil and add the green onion. Stir in the seasonings. Simmer briefly, then add the bean sprouts. Finish with a drizzle of sesame oil.

    Cook the rice noodles until al dente, then rinse with cold water. Drain well, place in bowls, and microwave at 600W for 1 minute 30 seconds.

  3. 3

    Pour the soup over the noodles and enjoy!
