Crispy fried sweet potatoes and lotus root with a fluffy, sweet inside.
Recipe background: Original, 2023.11.7. This was part of a menu to use up ingredients, along with sautéed cavolo nero and sweet peppers (see separate recipe). Added tempura and a snack treat.

Crispy fried sweet potatoes and lotus root with a fluffy, sweet inside.

Mix the eggs, cold water, and cake flour to make the tempura batter.

Coat the sweet potato and lotus root slices in the batter, then fry on both sides until crispy.

Serving suggestion: Serve with multigrain rice, pickled red turnip (see separate recipe), and sautéed cavolo nero with sweet peppers (see separate recipe).

Tempura snack idea: Make simple stick-style candied sweet potatoes (see separate recipe) by deep-frying sweet potato sticks after making the tempura, then tossing with sugar.
