Italian Wedding Soup

A classic favorite in American diners and Italian restaurants. This is a delicious soup that highlights the perfect pairing of meat and vegetables.
The Origin of This Recipe
This soup was popularized by Italian immigrants. Originally, it was made with chicken, but many recent American recipes use ground meat, which I also prefer. I've combined the best aspects of various recipes to make it at home.

Once browned, remove the meatballs. If using the same pot, wipe out the oil.
- 5
Add olive oil and butter to the pot, then add the onion (roughly chopped) and carrot (sliced) and sauté over medium heat for 5-6 minutes.
- 6
Add minced garlic and sauté until fragrant. Add water and dissolve the chicken bouillon cubes, bringing it to a boil.
- 7
Add the short pasta (orzo is recommended) and return the meatballs to the pot 7 minutes before the pasta is done, allowing them to simmer together.

Add roughly chopped spinach and bring to a boil.
- 9
Once served, grate Parmesan cheese on top.
