Add all the sauce ingredients marked with a circle (○) to a small saucepan. Bring to a boil and simmer until the alcohol evaporates.

Cut the asparagus, lotus root, bell peppers, and king oyster mushrooms, then thread them onto skewers.

Prepare the sausages and chicken breast, then thread them onto skewers.

Make the batter. Dip the skewered vegetables and meats into the batter.

Finely crush the panko breadcrumbs using a strainer, then coat the skewers thoroughly.

Coat the skewers with breadcrumbs just before frying.

Heat oil to 340–355°F (170–180°C) and fry the skewers until golden brown.
