In a medium bowl, combine the crema or sour cream, Dijon mustard, smoked paprika, black pepper, celery, red onion, Cotija cheese, and tuna. Mix well and set aside.

Preheat a griddle or skillet over medium-low heat for 1 minute. The temperature is important so the tortillas don’t brown too quickly before the cheese melts.

Warm the tortillas for 30 seconds on one side, flip them, and add 1/4 cup of shredded cheese to one tortilla along with half of the tuna mixture. Add another 1/4 cup of cheese on top of the tuna. Cover with the other tortilla.

Press gently with a spatula. Cook for about 2 minutes or until lightly golden, flipping occasionally with a spatula to prevent burning. Repeat with the remaining ingredients. Cut each sincronizada into quarters. Serve and enjoy!
