Ingredients

Serves 2 servings
  • 1 tablespoonolive oil
  • 3corn tortillas, cut into strips
  • 1small onion, chopped
  • 1jalapeño pepper, diced
  • 1tomato, diced
  • 3eggs
  • 2 ouncescooked chicken breast, beef flank, or pork carnitas, chopped (about 60 grams)
  • 2 slicesmelting cheese (such as Manchego, Gouda, Swiss, or Oaxaca)
  • Salsa
  • Sliced avocado

Steps

  1. 1

    Heat the oil in a skillet.

  2. 2

    Add the tortilla strips and fry until golden but not crispy.

  3. 3

    Add the onion and jalapeño and cook for 2 minutes, adding more oil if needed.

  4. 4

    Add the tomato and cook for about 2 minutes.

  5. 5

    Add the beaten eggs and cheese, stir, and cover the skillet.

  6. 6

    Turn off the heat and let the cheese melt.

  7. 7

    Serve with salsa and avocado slices. Enjoy with toasted bread.
