This idea came to me when trying to build a new recipe for my residents at the assisted living facility I work for. This minty green cake turned out fantastic.
Steps

Blend cookies in a blender or food processor until they come out in crumbs.

In a large bowl, mix the contents of cheesecake package as directed. When the batter is made add 3 tablespoons of mint extract

Layers the crumbs on a 9x13 pan
- 4
After washing your hands, firmly press your hand on the crumbs to compact them together
- 5
Bake crumbs at 350° for 10 minuets
- 6
Mix pistachio pudding into the cheesecake batter. This will give the desert a green hue
- 7
When the crumbs come out the oven, pour batter on to the crumbs
- 8
Set in fridge for 1 hour to harden
