Remake leftover potato salad or store-bought salad into a hearty sandwich for brunch or lunch.

Lay a large piece of plastic wrap in a diamond shape. Place the 2 slices of bread on top. Spread margarine and whole grain mustard evenly on the side of each slice that will be on the inside.

Wash and dry the lettuce, then fold it to fit the size of the bread. On one slice of bread, layer lettuce, all 3 slices of ham, potato salad, and another layer of lettuce.

Top with the second slice of bread. Wrap the sandwich tightly in the plastic wrap so the filling doesn't spill out, but be careful not to squish the bread. Pull the wrap tight for a firm hold.

Let the sandwich rest in the refrigerator for a while to help it set, which makes it easier to cut. When ready to slice, cut through the sandwich while it's still wrapped. Start with the tip of the knife for a clean cut.
