Broken Wheat (Dalia) lapsi is an Indian sweet popular in the states of Rajasthan, Gujarat and Maharashtra.
Steps

Heat 3 tbsp ghee in a non-stick pan or thick bottomed pot. Add broken wheat/dalia and sauté on low flame for 5 minutes or until dark brown.

Heat water on another gas while sauteing dalia. After the dalia is roasted properly, add 3 cup of hot water and stir continuously to avoid lumps

Cover and steam for 2-3 minutes on medium flame. Remove the lid. Cook for 6-8 minutes stirring constantly until the water evaporates. The broken wheat will become soft or cooked.

If the broken wheat is not cooked and the mixture has become dry, then add ¼ to ½ cup hot water as required. To check if Dalia is cooked, scoop out a pinch of Dalia with a spoon, let it cool and mash it in your hands. Cooked dalia will easily get mashed.

After the water is completely absorbed and also the lapsi is fully cooked. Then next add Jaggery and mix well. After adding jaggery, lapsi will become slightly thin (runny) as jaggery melts.

Add cardamom powder, raisins, charoli, almonds, pistachio slices. Stir constantly while cooking over low heat until the mixture thickens.

Then switch off the flame and serve warm in a plate.

Garnish with chopped almonds and pistachios and enjoy Broken Wheat Lapsi.
