Steps
- 1
Sear (sangkutsa) Liempo meat in a sautee pan (my favorite Esteele Pan).
"Sangkutsa", means half - cooking meat in high heat without oil just to seal moisture. - 2
Seat aside/remove meat from pan. Put in a separate bowl.
- 3
Sautee in olive oil onions and tomatoes. Drop onions first until translucent in color, then the tomatoes until soft. Don't burn as it will make the soup taste bitter.
- 4
Put back the meat on the sauteed mixture of onions and tomatoes. Continue sauteeing altogether for about 5 mins
- 5
In a tefal pressure cooker transfer the sauteed meat.
- 6
Add rice water and let it boil.
- 7
Once boiling add the sinigang mix and knorr cubes. Mix ingredients and cover the pressure cooker (close the steam valve). Continue to boil for approximately 30 mins.
- 8
Add okra and siling haba. Boil for 3 mins.
- 9
Finally add kangkong. At this point close stove. The heat of the soup is enough to cook the kangkong.
- 10
Season to taste with Patis.
- 11
Serve hot.
