Ingredients

5 servings
  1. 1-1.5 lbsgreen beans, trimmed
  2. Vinaigrette
  3. 1 tsplemon rind
  4. 1 tbslemon juice
  5. 1 tbsolive oil
  6. 1 tspDijon mustard
  7. 1/2 tspsalt
  8. 1/4 tsppepper
  9. 2garlic cloves, crushed or minced fine

Steps

30 minutes
  1. 1

    Combine/emulsify vinaigrette ingredients

  2. 2

    Boil large pot of water. Add green beans and boil 4 minutes until cooked but still crisp

  3. 3

    Pour vinegarette over cooked beans, toss, then serve
