Heat the curry in the microwave. Mix half of the curry with the rice, then shape the mixture into a round mound on a plate.

Dissolve the potato starch in 1 teaspoon of water. In a bowl, beat the eggs, milk, dissolved potato starch, and salt and pepper until well combined.

Melt the butter in a skillet over medium heat.

Pour in the egg mixture. Reduce the heat to low.

When the eggs start to set, open your chopsticks wide and gently move them through the eggs (at first, the sides of the eggs will still be soft, so the chopsticks will slide through easily).

From both sides, gently bring the eggs toward the center, leaving about 3/4 inch (2 cm) between the chopsticks, and slowly close the chopsticks. The eggs will gradually gather in the center.

Pause the movement of the chopsticks. Slowly and gently rotate the skillet (about one to one and a half turns).

Place the omelet on top of the rice mound. Fold the sides of the omelet inward. Pour the remaining curry over the top and serve!
