Toast red chillies and peppercorn. Blender until fine

Heat the wok until smoking hot. Add oil to coat the wok. Add meat and cook thru

Push the meat to the side. Add garlic, ginger and white part of scallions, paprika, sugar and half of the mixed chilli and pepper. Stir fried till fragrant

Pour water and taste. Put tofu simmer for 5 min. Put cornstarch that is mixed with water. Stir gently till combined

Garnish with scallions before serve
