Come Weekend & my husband demands something special for lunch . Instead of serving him an elaborate lunch , sometimes I prefer to make some pasta lunch & a bowl of soup. This way I am also free from the kitchen very fast & enjoy Sunday.

1 bowlGazpacho Soup
🍉Watermelon 🍉 Gazpacho 🍉
Penne pasta : 👇
1 cupPenne pasta, boiled, al dante
For sauted vegetables : 👇
2 tspbutter
1 tbspcapsicum, chopped
1/4 cupcorn boiled
1 tbspcarrots, chopped
1 tspchilli flakes
Salt - pepper to taste
1recipe white sauce
Chilli flakes to sprinkle on the Pasta
Grated cheese to garnish

Boil Penne Pasta Al Dante. Strain, wash under running water to stop the cooking process. Drizzle oil on the pasta & give it a toss. Keep aside.

Make white sauce as per the recipe.

Basic White sauce / Bechamel Sauce

Now take butter in a pan, add in carrots 🥕 & cook for 2 - 3 minutes. Add in capsicum & tomatoes. Add boiled corn. Mix well. Keep aside.

Mix white sauce and Penne Pasta very well. Sprinkle chilli flakes. Keep aside.

How to serve : Take penne pasta in a serving tray. Top it up with sauteed vegetables & corn 🌽. Sprinkle grated cheese on top. Serve Pasta & Vegetable Casserole with chilled Watermelon 🍉 Gazpacho.
