A traditional dessert we make for the nameday of Melahrini (me!), which brings back memories of mom and is perfect for after an Easter feast or any celebration!

In a mixer bowl, beat the butter and sugar together until creamy.

Add the eggs one at a time, beating well after each addition until fully combined.

In another bowl, whisk together the flour, semolina, baking powder, salt, vanilla, and cocoa powder. Set aside.

Place the walnuts in a blender or food processor and grind them.

Gently fold the dry ingredients into the egg mixture using a spatula or the mixer on low speed.

Finally, add the ground walnuts.

Pour the batter into a greased baking pan or glass baking dish and bake at 350°F (170°C) with the fan on, on the middle rack, for 35–40 minutes.

Let the cake cool completely while you prepare the syrup.

For the syrup:
Boil all the syrup ingredients together in a saucepan for 4–5 minutes. - 10
Cut the cooled cake into pieces and slowly ladle the hot syrup over it, a little at a time.

Let it cool and serve with your favorite ice cream!
