Ingredients

1-2 servings
  1. burrito size flour tortillas
  2. 4-5potatoes of your choice. I like yellow or red
  3. 4-5 slicesThick cut bacon
  4. Oil for cooking
  5. American cheese
  6. Salt pepper to taste
  7. Siracha
  8. Rosemary and thyme optional
  9. Consider adding vegetables. Pico is my go to. Or maybe just onions or tomatoes depending on what I have

Cooking Instructions

    Cook bacon to desired crispness and reserve fat

    Cut potatoes into chunks small enough for burrito and par boil. About 10 min. Salt water

  3. 3

    Cook the parboiled potatoes until crisp in the same skillet with bacon fat. Or cooking oil if instead. Salt and pepper to taste toss with fresh rosemary and thyme at end if desired.

    Cook your eggs when the potatoes are about 1 minute to completion. I usually use the same skillet for bacon potatoes and eggs. But optional. Sal and pepper if desired.

    Layer each tortilla down. Then cheese. Siracha. Then potatoes and eggs. Finally bacon. Optionally you can chopped your bacon up and mix into the eggs.

    Wrap burritos and set aside. Heat a skillet either dry or very little oil. Then toast your burritos one at a time. This will happen very quickly. Less than 30 seconds a side pay attention

    Cut. Allow to cool and enjoy.
