California has the largest crop ever of blueberries this year, 2024. Blueberries usually have a bumpercrop followed by a poor crop, so we want to preserve blueberries over a two year period.
Making blueberry fruit leather with honey and whole berry sun drying works the longest. We also make 8 half-pint jars of marmelade for 2 years. And rum topf for two years. And pemmican for two years. By using honey instead of sugar, the marmelade and fruit leather do not crystalize after a year.
By soaking dried berries in water and using the water, you catch all the original flavors, vitamins and nutrients from fresh berries.

  • 100 poundsfresh blueberries for sun drying, ten buckets
  • 20 poundsfresh blueberries, 1/4 cup honey per pound of blueberries to make 20 trays of fruit leather
  • 5 poundshoney
  • 5 poundsblueberries for Rum Topf
    California Farm Rum Topf Fresh Fruit Punch
  • 5 pintsvodka 80+ proof
  • 5 cupssugar
  • 5 poundsblueberries, crushed for marmelade
  • 1 cuphoney
  • 1 1/2 poundsdried blueberries for pemmican
    California Farm Air Fryer Pemmican Survival Food
  • 1 1/2 poundslean beef
  • 1 1/2 poundsbeef tallow
  • Equipment: sun drying table, flycover, 12 reused amazon cardboard boxes for insect free dry berry storage, half size cookie sheets (13”x 8”), 8 half pint jars with lids, water bath boiling pan, timer
  • Cost: farmfree, or $1 per pound at the farmers market if bought in bulk, honey $6 per pound, vodka $10 per quart, sugar $1.20 per pound, beef for pemmican $4 a pound

Steps

Sundry 1 week, fruit leather 1 week
  1. 1

    Spread 20 pounds of fresh blueberries in a single layer on drying table. Sort out the over ripe ones for marmelade, set aside. Cover with fly screen, sun dry one day, stir, sundry till still leathery but dry. Sort out any blemished or burst dried berries for marmelade. Remove dried berries after 10 am to cardboard boxes, after morning dew has evaporated. To reconstitute, use tall glass, fill with dried berries, immerse in cold water, sieve on top to keep berries submerged.

    Puree pound of fresh blueberries, add 1/4 cup warm honey, spread mix 1/4” thick on half size cookie sheet, dry under fly screen on the cookie sheet till you can peel the edge, about 2 days to a week. Peel leather off, flip, sun dry other side one more day, make rolls, cut to size, store dry and insect proof. Good for several years.

    Put cups of blueberries with half as many cups of cane sugar in sterilized glass jar, cover with 80+ proof vodka or everclear moonshine or rum, stir daily till sugar is dissolved, close jar to keep free of insects, good for two years.

    Make blueberry jam without pectin. Sterilize jars, lids, rings, airdry. Crush 5 cups ripe blueberries, taste, mix with 1 or 2 cups honey, boil 5 minutes, pour into jars, leave 1/2” head space, close. Boil water, immerse jars in boiling water, 15 minutes, cool. Label and store in pantry, good for several years.
