Ingredients

  1. Meat
  2. 1/2 pounduncured pork belly
  3. 1/4 poundham trimmings
  4. Beans and Tomatoes
  5. 31 ouncecanned diced tomatoes
  6. 1-1/2 poundnavy beans
  7. Spices and Seasonings
  8. 1 teaspoongranulated garlic powder
  9. 2 leavesbay leaves
  10. As neededsalt
  11. 1 stickbutter
  12. 1 teaspoonground black pepper
  13. 1 cuplight brown sugar
  14. 1/3 cuphoney
  15. 2-1/2 tablespoonsZhenjiang vinegar
  16. 1/4 cupmirin
  17. 1 cupfire roasted bell peppers
  18. 1 cupchopped onions
  19. 1/4 cupextra virgin olive oil

Cooking Instructions

  1. 1

    Wash the beans and remove any foreign objects. Drain the water off the beans. Add the olive oil and coat all the beans.

    Add the beans to a pot add the ham trimmings and broth. Separate the skin from the rest of the pork belly. Chop the pork belly into cubes.

    Add the pork belly to the beans and broth. Add the rest of the ingredients except for the salt vinegar and mirin.

    Allow to cook covered for 1 hour. Stir as needed.

  5. 5

    The liquids are reduced a bit. Add in the vinegar and mirin. Cook till the beans are tender then add the salt.
