Chipsi mayai

Breakfast has become a lot more addictive with this Tanzanian special dish Chipsi Mayai (French Fries Omelette
When I first came to know about the existence of this dish on a blog, I was so tempted by the idea that I had to try it.
This very simple yet delicious dish came out of Tanzania and is very famous dish there. You’ll find in every restaurant, and at every corner of the street. in Sawahili the national language of Tanzania, “chipsi” means “French fries” and “mayai” translates as “eggs”. So Chipso Mayai would be “French Fries in Eggs” or “Eggs in French Fries.” Chipsi Mayai is therefore a delicious, savoury and indulgent French fry omelette.
The fries are cut fresh, then fried or baked, and added to a mixture of beaten eggs. I used frozen fries that I cooked in the air fryer. You can add onions and tomatoes also. Just cook the onions and tomatoes first before pouring the egg mixture over.
For added freshness, the omelette is served with a side of some salad called “Kachumbari” and chilli sauce.

Steps
- 1
Cook the frozen fries according to package direction.
- 2
In a bowl combine the tomato, onion, cucumber, cilantro with lemon juice and season with salt and pepper. Set aside the kachumbari salad.
- 3
In a bowl whisk the eggs, salt, cilantro and pepper to taste.
- 4
Add French fries to the bowl and mix it all well.
- 5
In a pan heat oil or butter and add the fries-egg mixture to it. Cook for 3-4 minutes until golden from bottom. Gently shake the pan to keep the bottom from sticking.
- 6
Invert a large plate wider than the pan over the skillet. Holding the plate with a kitchen towel or oven mitt, flip the pan and plate in one motion to transfer the omelette onto the plate.
- 7
Slide the omelette back into the pan and cook until the bottom is set, 2 to 3 minutes more.
- 8
Serve hot with kachumbari salad, bread or have it as is. Enjoy!
