Chicken and Rice

Hola friends!!! Here’s a little bit of nothing I made that just tastes so good I had to share. Plenty of leftovers to make a nice pot of this golden beauty. This is basic and can be made in any shape form or fashion. Add ons for days. I like peas in mine but today I went bare bones. I roasted the chicken and made the rice yesterday just so I could make this today.

This is basic and can be made in any shape form or fashion. Add ons for days. I like peas in mine but today I went bare bones. In a large pot add the deboned chicken. Add in your cold cooked rice. Add, a cup at a time, the broth. Stir in and cook over medium-low heat and stir until it absorbs then add a little more broth. Do this until it’s a thick creamy consistency. A little like risotto. It took me about 3-4 cups.

If you don’t have broth just use water and adjust the seasonings. I use bullion or a chicken base a lot if I need broth.
