Hola friends!!! Here’s a little bit of nothing I made that just tastes so good I had to share. Plenty of leftovers to make a nice pot of this golden beauty. This is basic and can be made in any shape form or fashion. Add ons for days. I like peas in mine but today I went bare bones. I roasted the chicken and made the rice yesterday just so I could make this today.

Chicken and Rice

Ingredients

15 minutes
6 servings
  1. 1whole roasted or stewed chicken, deboned, save the strained broth
  2. 4-5 cupscooked rice (I made mine in chicken broth, a dab of butter, salt pepper and onion powder)
  3. as neededWater or broth
  4. Extra salt pepper and whatever seasonings you like in yours

Cooking Instructions

    In a large pot add the deboned chicken. Add in your cold cooked rice. Add, a cup at a time, the broth. Stir in and cook over medium-low heat and stir until it absorbs then add a little more broth. Do this until it’s a thick creamy consistency. A little like risotto. It took me about 3-4 cups.

    If you don’t have broth just use water and adjust the seasonings. I use bullion or a chicken base a lot if I need broth.

Any recipe I have can be made the old fashioned way OR replaced with lower carb options. Just ask and I’ll tell you what has worked for me.I’m the self proclaimed queen of the leftover. I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
