For the reshedaar kabaabs take meat chunks or chicken chunks don't make it with mince meat or mince chicken else the resha will not form and it will be simple Shami kebaab. Now let's make the kabaab masala for that take all the above-mentioned ingredients of kabab masala and grind it to a powder make it a bit coarse don't grind it smoothly. The coarse spices will give the better taste to the kabaas. You can make this masala for any variety of kabaab and store it for at room temperature.

You can store it in the refrigerator also for long time. Now take chicken breast clean and wash it and cut it in small pieces. Clean, wash and soak the chana daal for half an hour. Now in a pressure cook add the chicken pieces followed by soaked chana daal, prepared kabaab masala, sliced onion, ginger and garlic. Add salt to it then add 2 cups of water mix them all well then close the lid of pressure cooker and cook it for 15 minutes. First pressure on high flame then lower the flame and cook.

Then off the flame and allow the pressure to release naturally. Once cool down open the lid and mash it using a masher or spatula or by hand. You don't need any grinder to mash it but if you want you can grind it in a chopper or mixer grinder. Once done add diced onions to it. Then add chaat masala, dry roasted cumin powder, black salt, dried mint and chopped green chillies. Mix the paste very well not add 1 egg to it and mix that all again. Once mixed well start makin patties out of it.

For that take a portion of paste make it round between your palms then flatten it and it's done. Now to fry them take a pan then heat up some oil and put the patties in it don't overcrowd it and shallow fry them on high flame 3-4 minutes on one side then gently flip it up and fry on the other side as well until it gets a beautiful golden brown colour. Take them out and like so shallow fry all the kabaabs. And it's done serve it with roti,naan,chapati,paratha or with whatever you like.

You can store it also in the freezer or deep freezer when it's ij paste form or make patties and the store in a zip lock bag or store it after frying.
