Ingredients

Serves 1 serving
  1. 1 bundleJapanese somen noodles
  2. Mackerel Sauce
  3. 1 canboiled mackerel (with liquid)
  4. 1/2 teaspoonspicy bean paste
  5. 1/3 cupwater (100 ml)
  6. 1 teaspoonvegetarian oyster sauce
  7. 1 teaspoonsoy sauce
  8. Miso Soy Milk Soup Base
  9. 1 tablespoonmiso
  10. 1/3 cupunsweetened soy milk (80 ml)
  11. Optional toppings, to taste
  12. Chili oil, to taste
  13. Sesame seeds, to taste
  14. Chopped green onions or other greens, to taste

Steps

    Pour the canned boiled mackerel with its liquid into a pot. Add the spicy bean paste, vegetarian oyster sauce, soy sauce, and 1/3 cup water (100 ml). Break up the mackerel and stir to combine. Bring to a boil, then set aside.

    In another pot, bring water to a boil and cook the somen noodles according to the package instructions.

    Dissolve the miso in hot water, then add the unsweetened soy milk. Microwave until boiling (about 1 minute).

    Place the cooked noodles in a bowl. Top with the mackerel mixture from step 1 and sprinkle with sesame seeds. Add chili oil and chopped green onions or other greens to taste.
