Japanese Saba (Mackerel) Dan Dan Noodles

In Taiwan, canned mackerel noodles are usually the tomato-flavored kind known as 'typhoon noodles.' This time, I used canned boiled mackerel, which offers more ways to cook it.
Japanese-style Dan Dan noodles are typically made with ground meat, but using ready-to-eat canned mackerel is more convenient and nutritious.
Try adding spicy bean paste if you want a bolder flavor!

Pour the canned boiled mackerel with its liquid into a pot. Add the spicy bean paste, vegetarian oyster sauce, soy sauce, and 1/3 cup water (100 ml). Break up the mackerel and stir to combine. Bring to a boil, then set aside.

In another pot, bring water to a boil and cook the somen noodles according to the package instructions.

Dissolve the miso in hot water, then add the unsweetened soy milk. Microwave until boiling (about 1 minute).

Place the cooked noodles in a bowl. Top with the mackerel mixture from step 1 and sprinkle with sesame seeds. Add chili oil and chopped green onions or other greens to taste.
