Ingredients

Serves 1 serving
  • 1 bundleJapanese somen noodles
  • Mackerel Sauce
  • 1 canboiled mackerel (with liquid)
  • 1/2 teaspoonspicy bean paste
  • 1/3 cupwater (100 ml)
  • 1 teaspoonvegetarian oyster sauce
  • 1 teaspoonsoy sauce
  • Miso Soy Milk Soup Base
  • 1 tablespoonmiso
  • 1/3 cupunsweetened soy milk (80 ml)
  • Optional toppings, to taste
  • Chili oil, to taste
  • Sesame seeds, to taste
  • Chopped green onions or other greens, to taste

Steps

    Pour the canned boiled mackerel with its liquid into a pot. Add the spicy bean paste, vegetarian oyster sauce, soy sauce, and 1/3 cup water (100 ml). Break up the mackerel and stir to combine. Bring to a boil, then set aside.

    In another pot, bring water to a boil and cook the somen noodles according to the package instructions.

    Dissolve the miso in hot water, then add the unsweetened soy milk. Microwave until boiling (about 1 minute).

    Place the cooked noodles in a bowl. Top with the mackerel mixture from step 1 and sprinkle with sesame seeds. Add chili oil and chopped green onions or other greens to taste.
