Ingredients

25 minutes
4 persons
  1. 1 cupsemolina
  2. 1/2 cupghee
  3. 1/2 cupsugar
  4. 1/4 cuppineapple chunks
  5. 1/4 cuppineapple pulp
  6. 1/4 tspsaffron
  7. 1 tspcardamom powder
  8. 2 tbspcashew halves
  9. 1 tbspkismis

  1. 1

    Heat one tsp ghee and sauté pineapple chunks for a while. Further add two tbsp of sugar and mix. Now add two and half cups of water and saffron. Let it boil and cook for a while.

    Now heat two tbsp ghee in a thick bottom pan. Fry cashew nuts and kismis turn by turn and keep aside.

    Now in the same pan with ghee, add semolina and sauté well on a low flame.

    Once its sauteed, add cooked pineapple with water. Mix well and then add pineapple pulp followed by sugar. Mix well and cook on a low flame for couple of minutes.

    Add remaining ghee and cook till ghee separates and kesari leaves the sides of pan.

    Finally add caramom powder, fried cashew nuts and kismis. Mix and turn off the heat.

    Garnish with some pineapple chunks and almond pistachio slivers.
    Note:
    1. Sugar quantity can be adjusted as per the sweetness of pineapple.
