Gaeng Som with Acacia Omelet (Vegetable-Focused, Clean Recipe, Easy to Make)

Chop the vegetables and prepare all ingredients.

Make the acacia omelet: Beat the eggs, then add the acacia leaves. Heat a skillet over medium heat, add the oil, and let it get hot. Pour in the egg mixture and fry until cooked on both sides. Cut into bite-sized pieces and set aside.

Add water to a pot (you can use the same one from the omelet). Bring to a boil over high heat. Stir in the gaeng som curry paste until dissolved. Season with fish sauce, tamarind paste, and palm sugar.

Add the chopped napa cabbage and any other vegetables you like, starting with the ones that take longer to cook.

Once all the vegetables are cooked, add the acacia omelet pieces and squeeze in the lime. Turn off the heat.
