Stuffed Grape Leaves and Zucchini with Meat

I cooked this in a pressure cooker, which is why I added the lemon juice from the start. If I had cooked it in a regular pot, I wouldn't have added the lemon juice until the end, then boiled it for 10 minutes.

Cooking Instructions

Boil the grape leaves for about 20 minutes, then rinse and drain them.

Rinse the rice and drain it. I don't soak it. Then mix all the stuffing ingredients.

Stuff the zucchini and roll the grape leaves.

Prepare everything and season the meat with its spices and salt along with the vegetables.

Place a few grape leaves at the bottom of the pot, then add the meat and vegetables.

Arrange the grape leaves and place the zucchini with them.

I put some stuffing in aluminum foil, wrapped it like a grape leaf roll, and pierced it with a knife.

Place the wrapped stuffing on top of the zucchini and continue layering the rest of the zucchini on top.

Sprinkle with salt, place a weight on them, cover with water and lemon juice, and press them down. Once the pressure cooker whistles, set the timer for 25 minutes, then turn it off and let the pot cool slightly from boiling.

Open the pot and carefully drain the broth.

Remove the zucchini and the wrapped stuffing from the top.

Remove the grape leaves and arrange them on a platter with the zucchini and lamb chops, and add a little broth.

Note: You can strain the broth and flip the pot over a large platter if you prefer. I like to arrange them. Enjoy!

These are not the typical Greek stuffed grape leaves , these are almost my Grandmother's grape leaves or " cigars" as she called them.They do remind you of a cigar, but she would get her grape leaves wild by the railroad tracks. As she got older and the grapevine disappeared she bought them at the store.She had a special pot she used to cook them in, it was the same pot that when we were little we used as a booster chair.I basically use my stuffed pepper filling and roll it in grape leaves. If you like real tomato saucy sauce use more spaghetti sauce and less chicken broth. We like a little tomato flavor in ours. So we use chicken broth mostly.I would try the original and then adjust to your families likes.When I was little I did not like these, I only ate the filling. Now every so often I get a craving for these.They do take a while to make but you get faster as you go and you learn timesaving tricks to share with others. These freeze well if you have leftovers.
