This is my favourite guacamole! I first found it on the All The Cooks site years ago but it hasn't crossed over from there to here so I'm posting it so others can enjoy it. It comes from a 1995 cookbook by Ann Hodgman called 'Beat That!'. It's not your normal guac. It has a lot of extra ingredients but they make it completely fabulous!

Ingredients

10 servings
  • 4ripe Hass avocados
  • 2 tbsplemon juice
  • 2 tbspchopped scallions / spring onions - green part
  • 2 clovesgarlic, finely chopped
  • 2jalepenos, deseeded and finely chopped
  • 1tomato, deseeded and chopped
  • 1 tbspsour cream
  • 1 tbspWorcestershire sauce
  • 1 tbspolive oil
  • 1 tbspwhite wine vinegar
  • 2 tspground cumin
  • 2 tspchilli powder
  • 1/4 cup (65 g)salsa
  • 1/4 cup (30 g)Monteray Jack cheese, grated / shredded
  • 1/4 cup (35 g)finely chopped chorizo / kielbasa sausage
  • 2 tbsptequila
  • 2 tbspfreshly chopped cilantro / coriander
  • 1 tspsalt

Steps

10 minutes
  1. 1

    Roughly chop the avocados in a large bowl then mash half of the chunks

    Add the rest of the ingredients in order, stirring lightly after each addition

    Serves around 5 cups / 10 people

    To make this safe for Jack I used Violife vegan cheese in place of the Monteray and Alpro coconut yogurt in place of the soured cream
