These rolls were made with the help of the food processor for the inital knead. It worked well and produced flavorful soft but sturdy sandwich type rolks. I flavored them with garlic and black pepper for a delicious change.

Ingredients

  1. 2cuos warm whole milk
  2. 2 tablespoonsinstant rise active yeast
  3. 1^4 cup granulated sugar
  4. 6 tablespoonsbutter, at room temperature
  5. 2large eggs, at room temperature
  6. 6 cupsbread flour
  7. 2 teaspoonssalt
  8. 1 teaspoongranulated garlic
  9. 1 teaspoonfresh cracked black pepper
  10. For Topping
  11. 2 tablespoonssalted butter melted woth 2 tablespoons honey

Cooking Instructions

    In the bowl of a large food processor fitted with dough nlade add milk, sugar and yeast, stir with a rubber spatula until combined and let sit 5 minutes

    To bowl add butter, eggs and 5 1/2 cups of the flour, salt, granulated garlic and pepper pulse until combined

  3. 3

    Turn processor on to run until a soft dough forms and pulls away from the sides of the bowl, add more flour omly if dough is very sticky

    When dough has formed, turn it out on to parchment paper and form a ball

    Lightly coat a large bowl with oil place dough in bowl, turn over to coat with pil, cover and place in a warm spot until doubled in size, about 1 hour

    Turn the dogh ot onto a lightly floured work surface and flatten it and do 6 folds as shown, let rest 5 minuytes

    Repeat this process 5 more timed, then cover with plastic wrap to rest 10 minutes

    Cut into 18 to 20 rolls, making each roll into a ball, place on parchment paper, cober and let rise in a warm spot until doubled, about 20 to 25 minutues

    Meanwhile preheat the oven to 375, bake rolls 11 to 15 miinutes, until golden and sound hollow when tapped. Brush with melted honey butter. Servecwarm. They can be frozen and reheated in a warm oven

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
