Shrimp and Loofah Yi Mein Noodle Soup

Last week, I brought home some homegrown loofah from my in-laws. I made this dish using only chemical-free shrimp and loofah. My husband said the broth was incredibly fresh and delicious. By keeping it simple and not adding too many seasonings or additives, we really get to enjoy the natural flavors we love.
Shrimp and Loofah Yi Mein Noodle Soup

These are the only main ingredients, but feel free to add any others you like.

Prepare the ingredients: Peel and devein the shrimp. Peel the loofah and slice it into pieces.

Bring a pot of water to a boil. Add the loofah first, since it takes longer to cook. Once the loofah softens, add the yi mein noodles and cook for about 1 minute. You can season with salt before adding the noodles.

Add the shrimp and crack in the eggs. Bring to a boil, then turn off the heat. Cover and let it sit for about 3 minutes before uncovering.
